Vegetarian pasta carbonara with fresh herbs and toasted pine nuts

Pasta carbonara is a perfect comfort food – and this is a quick and easy vegetarian (although not egg-less) version. The fresh herbs give it a light and summery taste and balance the eggs and cheese. Add any fresh herbs you have on hand. I think it would be great to try this with cilantro for example. I hope you’ll like this as much as I did!

Ingredients/ Zutaten
  • (for two persons)
  • 200 grams (a little less than half a pound) of linguine or spaghetti
  • A good handful of fresh herbs (basil, parsley, marjoram, tarragon, rosemary, etc)
  • Half a handful celery leaves (optional)
  • Two cloves of garlic
  • About one cup of grated parmesan cheese
  • Two eggs
  • Olive oil
  • Salt
  • A few tablespoons of pine nuts, chopped
Preparation/ Zubereitung
  1. Boil water in a large enough pot, salt it lightly and add the pasta. Cook according to instructions on the packet until it's al dente, usually eight to ten minutes.
  2. Meanwhile, chop the herbs, the celery leaves and the garlic. Place a large saucepan on the stove and turn up the heat. Add the chopped pine nuts. Let them roast for half a minute or so until they start browning, then transfer them to a bowl and set aside.
  3. When the pasta is almost done, heat a teaspoon of olive oil in the same pan and add the garlic. Let it roast until it becomes fragrant - about a minute - then add the herbs. Stir and lower the heat to medium. Beat the eggs in a small bowl and add a little salt.
  4. Drain the pasta and add it to the pan. Stir well. Add the cheese and pour in the eggs right away. Stir quickly - the eggs should cook lightly but not scramble. Transfer the pasta to a serving bowl or the plates. Sprinkle with a small pinch of salt. Top it off with the roasted pine nuts and a little more grated cheese or fresh herbs if you want. Enjoy!
